Mozart and Haydn composed their quota of it, the most famous examples being Mozart's Abduction from the Seraglio and Haydn's Military Symphony. "Turkish" or "janissary" music usually featured exotic harmonies and extra percussion in the orchestra--bass drum, cymbals, and triangle.
